Honey is honey even when crystallized. Crystallization is the natural process by which glucose in honey precipitates out of the liquid honey. Depending on the variety of honey, crystallization occurs at different rates and sometimes not at all. If honey crystallizes, you can still eat it in this form. Or you could simply place the honey in near boiling water which has been removed from the heat with the cap open or place in a microwave-safe container with the lid off and microwave, stirring every 30seconds till the crystals dissolves. Great care should be taken not to burn or scorch the honey.
