Due to its high fructose content, Honey has higher sweetening power than table sugar. This means that less quantity of honey can be used in sweetening in comparison to sugar. Therefore, when substituting honey for granulated sugar in recipes, it is advisable to substitute honey for half of the sugar called for in the recipe. Reduce oven temperature for baked goods when using honey by about 15C to prevent over browning; reduce any liquid called for by 1/4 cup for each cup of honey used and add 1/2 teaspoon baking soda for each cup of honey used
